Simple Icing Marshmallow Fondant

A rollable fondant for smooth decoration


350g Simple Icing/Royal Icing

200g Marshmallows (white)

1 tblspoon water

Cornflour for dusting

Butter for greasing utensils


Start by generously greasing the microwaveable bowl, paddles for mixer and all other utensils used (the marshmallow sticks to everything like chewing gum)

1. Place the 200g of marshmallows in the greased bowl with the water and microwave on full power for 1 minute, until all are melted and puffed up. Stir mixture well to make sure there are no lumps.

2. Add half the icing sugar to the melted marshmallow mixture and using an electric mixture with the dough hook attachment, mix on low speed until all the icing is incorporated. Add the remaining icing and mix well, the mixture will be quite warm at this stage.

3. Empty mixture out onto a sheet of greaseproof paper with a dusting of cornflour on it (or better still use silicone paper). The mixture will be very sticky at this stage. Sprinkle some cornflour over the mixture, wrap in the greaseproof paper and place in the fridge for 30 minutes.

4. Remove from the fridge when cool, turn out on a surface well dusted with cornflour. Knead mixture well before use.
